Cabin Waffles (DIY Waffle Mix)
3 1/2 cups all purpose flour
1/4 cup granulated sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Whisk all ingredients together in a large bowl. Store in an airtight container until ready to use. To gift, you’ll need two pint jars with a screw-top lid. Place two cups of waffle mixture in each jar.
Yield: 4 Belgian waffles, or 6-8 standard waffles

2 eggs, lightly beaten
2 tablespoons butter, melted
1 1/2 cups buttermilk
Place waffle mix in a large bowl. Stir in wet ingredients and mix until well incorporated. Pour batter into a heated and buttered waffle iron (capacities will vary). Cook for 5 minutes or until waffles are golden.
Notes: When I take this mix to-go, I include a vanilla bean in each jar of mix. Although it’s not necessary, I enjoy the extra layer of flavor. The bean can be split and scraped then added in with the wet ingredients.
Buttermilk substitute – 1 cup sour cream mixed with 1/2 cup whole milk.

2 large eggs
3 1/3 c buttermilk
2 c old fashioned oatmeal
1/2 c flour
1 tsp baking powder
1 tsp baking soda
add 1 1/3 c buttermilk
In a large bowl, whisk together the buttermilk and eggs. Add dry ingredients and mix until the batter is
combined. Let the batter stand at room temp for one hour or chilled overnight.
Heat a griddle over moderate heat until it is hot enough to make drops of water scatter over the surface then
brush it with some of the oil. Working in batches, drop the batter of 1/2 c measures onto the griddle, cook
the pancakes for 2 min on each side, or until they are golden and cooked through. Serve with syrup.

- 3 cups fresh blueberries
- 2 cups old-fashioned oats
- 1 cup all-purpose flour
- 1 cup milk
- 2/3 cup brown sugar
- 1/2 cup slivered almonds, optional, plus more for garnish
- 1/4 cup vegetable oil
- 1/4 cup melted butter
- 1 large egg, beaten
- 1 tablespoon baking powder
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- Preheat oven to 350º and lightly grease a 9×13-inch baking dish with butter or nonstick spray.
- In a large bowl, combine oats, flour, sugar, baking powder, cinnamon and salt, and mix together.
- In a separate bowl, whisk together milk, oil, butter, egg and vanilla extract until combined.
- Pour wet ingredients into the dry ingredients and stir until just combined, then fold in blueberries and almonds, if using.
- Transfer mixture to greased baking dish and place in oven.
- Bake for 30-35 minutes, or until oats are tender and cooked through.
- Serve warm, sprinkled with more almonds, and enjoy!
- 1/2 cup warm water (100º-110ºF)
- 1 packet active dry yeast
- 2 cups whole milk
- 1 stick unsalted butter (melted)
- 3 cups all-purpose flour
- 1/2 teaspoon Kosher salt
- 2 teaspoons sugar
- 2 large eggs
- 1/2 teaspoon baking soda
- pure maple syrup (warmed for serving)
- In a large bowl, add the water and the packet of yeast and whisk to combine. Let sit for 5 minutes until foamy. If it doesn’t become foamy, start over.
- In another large bowl, add the milk, butter, sugar, flour and salt and whisk to combine. Add the milk mixture to the yeast mixture and whisk to combine. Whisk in the flour until there are no visible lumps. Cover with plastic wrap and allow to sit out overnight.
- The next morning, preheat a waffle iron and grease with oil or cooking spray. Whisk the eggs, baking soda, and ham into the batter, scoop a 1/2 cup portion onto the waffle iron and cook until golden brown and crisp on both sides, about 3-5 minutes. Repeat with the remaining batter. Serve with the warm maple syrup.
- Tip: Freeze the waffles and place the frozen waffles in the toaster until crisped and warmed through for a quick breakfast.
Cheesy Potato Breakfast Bake
- 1 pint cherry tomatoes (cut in half)
- 3 cloves garlic (peeled, thinly sliced)
- 5 sprigs thyme
- 1 tablespoon olive oil
- 1 tablespoon butter
- 9 large eggs
- 2 tablespoons Dijon mustard
- 1 cup whole milk
- 2 cups Gruyere (grated)
- 6 cups shredded frozen potatoes (thawed)
- Kosher salt and freshly cracked black pepper (to taste)
- Preheat the oven to 450ºF. Line a baking sheet with aluminum foil.
- In a large bowl, toss together the tomatoes, garlic, thyme, olive oil, salt and pepper. Spread out evenly onto the prepared baking sheet.
- Bake for 10-12 minutes or until tomatoes slightly charred. Set aside to cool slightly.
- Reduce the heat in oven to 350ºF.
- Butter a 9×13-inch casserole dish. In a large bowl, add the eggs, milk and mustard. Whisk until blended. Fold in the gruyere, shredded potatoes, and oven roasted tomatoes. Season with salt and pepper. Pour the mixture into the buttered casserole dish.
- Place in oven for 35-40 minutes. Let rest for 5 minutes before serving.
- Tip: This casserole can be assembled and refrigerated 24 hours in advance.
Nekisia Davis’ Olive Oil and Maple Granola
NOTE I did not use anything raw except pumpkin seeds
3 cups old-fashioned rolled oats
1 cup hulled raw pumpkin seeds
1 cup hulled raw sunflower seeds
1 cup unsweetened coconut chips or regular
1 1/4 cup raw pecans, left whole or coarsely chopped (use a variety of nuts)
3/4 cup pure maple syrup (use less)
1/2 cup extra-virgin olive oil (use less)
1/2 cup packed light-brown sugar(use less)
Add oat bran
Heat oven to 300° F.
Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a rimmed baking sheet. Transfer to oven and bake, stirring every 10 to 15 minutes, until granola is toasted, about 45 minutes.
Remove granola from oven and season with more salt to taste. Let cool completely before serving or storing in an airtight container for up to 1 month. Makes about 7 cups

1 cup (8 ounces) lukewarm milk
2 large eggs, room temperature
1/3 cup unsalted butter, cut up
4 3/4 cups (20 ounces) Mellow Pastry Blend OR 4 1/2 cups Unbleached All-Purpose Flour
1 3/4 teaspoons salt
1/2 cup sugar
2 1/2 teaspoons instant yeast
1/3 cup unsalted butter, softened
1 cup brown sugar, packed
3 tablespoons ground cinnamon
one 3-ounce package cream cheese, softened
1/4 cup unsalted butter, softened
1 1/2 cups glazing or confectioners’ sugar
1/2 teaspoon vanilla extract
Manual/Mixer Method: Combine all of the dough ingredients in a large mixing bowl, stirring till the mixture becomes cohesive. Transfer the dough to a lightly oiled work surface, and knead it for 5 to 8 minutes, till it’s smooth. Or knead it in an electric mixer, using the dough hook, for 4 to 7 minutes at medium speed. Place the dough in a lightly oiled bowl, turn to grease all sides, cover the bowl with a proof cover or plastic wrap, and let it rise for 60 minutes, till it’s nearly doubled in bulk.
Assembly: Transfer the dough to a lightly greased work surface, and roll it into a 16 x 21-inch rectangle. Spread the dough with the 1/3 cup butter. Mix the brown sugar and cinnamon, and sprinkle it evenly over the dough.
Starting with a short end, roll the dough into a log, and cut it into 12 slices. Place the buns in a lightly greased 9 x 13-inch pan. Cover the pan with a proof cover or plastic wrap, and let the buns rise until they’re nearly doubled, about 30 minutes.
Bake the buns in a preheated 400°F oven until they’re golden brown, about 15 minutes. While the buns are baking, make the icing.
Icing: In a small bowl, beat together the cream cheese, butter, sugar, and vanilla. Spread the icing on the buns while they’re warm. Yield: 12 big buns.
Tomato and Cream Cheese Turnovers from food52.com
- 6 ounces cream cheese, at room temperature
- 2 large eggs (one is for an egg wash)
- Salt and pepper
- 2 sheets of all-butter puff pastry dough, defrosted
- 1 large tomato, sliced in 1/4-inch thick slices
- 2 tablespoons sesame seeds
- Flour, for dusting
- Heat your oven to 375° F. In a large bowl, beat together the cream cheese and one egg plus a couple pinches of salt and pepper. Beat until smooth.
- On a floured surface, roll the first sheet of puff pastry out to about 1/8 inch thick. Cut it into 6 rectangles. Spread some cream cheese mixture on each rectangle and place a bit of tomato on top of the cream cheese. To make more reasonably sized pastries, fold each of the rectangles over their filling and press the edges well with a fork to seal them, then repeat with the next sheet of puff pastry. To make big pastries, put more filling on each of the rectangles, then roll out the next sheet of puff pastry, cut that into 6 rectangles and put one on top of each of the rectangles with filling, then press around the edges with a fork to seal. Transfer the pastries to two baking sheets.
- Whisk the second egg with a tiny splash of water, then brush each pastry with some of the egg wash and sprinkle them with sesame seeds.
- Bake each sheet of pastries in the oven until golden brown and puffed, about 25 minutes. Remove from the oven and transfer to a cooling rack. Allow to cool slightly before eating, but these guys are definitely best eaten fresh. Otherwise the puff pastry gets a little sad and the tomato gets soggy. Makes 6 very large or 12 more modest pastries
Fresh, Fruity Summer Porridge from “The Family Cooks”
Summer porridge? It may sound like an oxymoron, but this hearty mix of raw oats, yogurt, and fresh fruit is cool and tangy. Spoon it into pretty glasses or mason jars, pop them into the fridge, and let chill overnight so the oats soften and all the flavors get to know each other. The next morning, enjoy breakfast in the sun, or just tuck a jar to go into your pocket–or into little hands–if time is tight.
1 cup old-fashioned rolled oats (not “instant”)
3 cups plain yogurt (whole or low-fat) or kefir
3 tablespoons honey or maple syrup
2 large apples (not peeled), grated
1 cup mixed fresh fruit, such as sliced kiwi or strawberries, raspberries, blueberries, or blackberries (save a little extra for garnish)
1. Combine the oats, yogurt, honey, apples, and mixed fruit in a bowl, making sure that the apple is completely folded into the yogurt .
2. Divide the porridge evenly among six 8-ounce glasses or mason jars, cover tightly with wrap or lids, and refrigerate overnight. Have a good night’s sleep.
3. The next morning, as the sun rises, garnish the porridge with more fresh fruit and call the troops to breakfast.
