Instant pot creamy butternut squash risotto

1 tablespoon vegetable oil
2 tablespoons salted butter, melted
1 medium yellow onion, chopped
1 tablespoon crushed garlic
4 cups of butternut squash, peeled and largely diced
2 cups Arborio rice
4 1/2 cups vegetable broth
1/2 cup dry white wine
8 ounces Baby Bella mushrooms
1 – 2 teaspoons seasoned salt
1/4 teaspoon white pepper
1/2 tsp of black pepper
1/4 tsp nutmeg
1/4 tsp of Italian seasoning
1/4 teaspoon dried parsley
5 ounce bag baby spinach
1/2 cup grated Parmesan cheese 

Add the butter and oil to the Instant Pot. Hit “Sauté” and “Adjust” so it’s on the “More” or “High” setting and wait until the butter has melted and it bubbles.

Add the onion and cook for about 2 minutes so it softens and just lightly browns. Add in the butternut squash and stir with the onions for another 1-2 minutes (the squash will be very hard, but don’t worry – it will completely soften up after pressure cooking). Next, add in the mushrooms, stir and cook for another minute. Finally, add the garlic, stir with everything else and cook for another 3 minutes.

Add in the white wine and once it bubbles, let it do so for another 2 minutes so some of the alcohol burns off. Add rice and stir. Add in the broth, seasoned salt, white pepper, black pepper, nutmeg, Italian seasoning and dried parsley. Stir well, deglazing the bottom of the pot and then place the spinach on top (but do NOT mix in with everything else – just let it rest on top. Also, it may look like a LOT of spinach is in there but you’ll be shocked at how it cooks down).

Secure the lid, hit “Manual” or “Pressure Cook” High Pressure for 6 minutes. Quick release when done and stir the spinach in with the risotto (when you do this, the spinach will have become nothing but little green strands).

Add in the grated Parmesan, stir and transfer to a serving bowl.

Parmesan-Butternut Squash Gratin from Phyllis Keating

butternut squash (2 1/2 lb)
1/4 cup butter or margarine
large cloves garlic, finely chopped
1/4 cup  panko bread crumbs
1/3 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup chopped fresh parsley

1 Heat oven to 375°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. Peel, halve lengthwise and seed squash; cut into 1/2-inch-thick slices. Arrange with slices overlapping slightly in bottom of baking dish.

2 In 2-quart saucepan, melt butter over medium heat. Reduce heat to low. Add garlic; cook 2 to 3 minutes, stirring frequently, until garlic is soft and butter is infused with garlic flavor. Do not let butter brown.

3 In small bowl, mix bread crumbs, cheese and 1 tablespoon of the butter-garlic mixture.

4 Brush squash slices with remaining butter-garlic mixture. Sprinkle with salt, pepper and bread crumb mixture.

5 Bake uncovered 30 to 40 minutes or until squash is tender when pierced with fork. Increase oven temperature to 425°F; bake 5 to 10 minutes longer or until lightly browned. Before serving, sprinkle parsley over top.

Caramelized Onion and Butternut Squash Tart from food52.com

  • large yellow onions, halved and sliced
  • tablespoons unsalted butter

  • ounces crème fraîche
  • ounces Gruyère, grated
  • ounces Parmesan, grated
  • teaspoon sea salt
  • teaspoon freshly ground black pepper
  • 4sprigs thyme
  1. Melt butter in large saucepan over medium heat. Add onions, thyme sprigs, and 1/2 teaspoon salt, stirring to mix. Cover and reduce heat to low. Cook, stirring occasionally, until dark golden brown, about 45 minutes. Remove thyme stems.
  2. Meanwhile, preheat oven to 450° F. Toss butternut squash with olive oil and 1/2 teaspoon salt and spread out on baking sheet. Bake until browned and very soft, stirring once, about 40 minutes.
  3. Reduce oven heat to 350° F. Roll dough out until thin and press into a well-greased 10-inch tart pan. Prick all over with a fork and bake in oven 10 minutes.
  4. In a medium mixing bowl, combine eggs, crème fraîche, gruyère, Parmesan, and black pepper.
  5. Spread caramelized onions in bottom of tart and top with butternut squash. Pour gruyère mixture over the squash, making sure to spread it evenly throughout the tart.
  6. Bake until golden brown and cooked through, about 30 to 40 minutes.
Pastry Dough

  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 teaspoon salt
  • stick butter
  • tablespoons ice water
  1. Cut butter into 1-tablespoon pieces and freeze for 10 minutes.
  2. Mix flour and salt in food processor or large bowl.
  3. If using food processor, add butter and mix until mixture resembles small pea-sized balls. If mixing by hand, work quickly, mixing the butter in with your hands until it forms small pea-sized balls.
  4. Add in ice water and mix just until dough forms and comes together. Form into disk, wrap in plastic, and place in fridge for 20 minutes.

 

Squash With Chili Yogurt and Cilantro Sauce washington post

  • 1 large butteyumrnut squash (3 pounds)
  • 1 teaspoon ground cinnamon
  • 6 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 3/4 ounces cilantro, leaves and stems, plus more leaves for garnish
  • 1 small clove garlic, crushed
  • 2 1/2 tablespoons hulled pumpkin seeds
  • 1 cup regular or low-fat plain Greek yogurt
  • 1 1/2 teaspoons Sriracha (may substitute another savory chili sauce), plus more as needed

Position racks in the upper and lower thirds of the oven; preheat to 425 degrees. Have two rimmed baking sheets at hand.

Cut the squash in half lengthwise. Discard the seeds, then cut the flesh into wedges 3/4 inch wide and about 2 3/4 inches long, leaving the skin on. Place in a large bowl with the cinnamon, 2 tablespoons of the oil, 3/4 teaspoon of salt and a good grind of pepper. Mix well so that the squash is evenly coated. Place the squash pieces on the baking sheets skin side down and roast for 35 to 40 minutes, until soft and starting to color on top. Remove from the oven and set aside to cool.

To make the herb paste, combine the cilantro, garlic, the remaining 4 tablespoons of oil and a generous pinch of salt in a mini food processor; puree to form a smooth paste.

Reduce the oven temperature to 350 degrees. Spread the pumpkin seeds on a baking sheet and roast for 6 to 8 minutes. Their outer skins will pop open, and the seeds will become light and crispy. Let them cool.

To serve, swirl together the yogurt and Sriracha sauce. Lay the squash wedges on a platter and drizzle the spicy yogurt sauce, then the herb paste, over the top. (Or swirl the yogurt sauce and herb paste together if you like.) Scatter the pumpkin seeds on top, followed by the extra cilantro leaves and additional Sriracha, if desired, and serve.

 

Roasted butternut squash and carrot soup

1 butternut squash cut in half
3 carrots cut in pieces
2 cloves garlic cut in half
1 onion diced
1 – 2 tbsp olive oil
1 tsp cumin
1/2 tsp corriander
medium piece of orange zest, no white
salt and pepper
4-6 C water
1 tsp soup base

Place squash with seeds left in it’s easier to remove them after roasting, carrots and garlic on lightly greased baking sheet, roast in 350 degree oven until squash is done, 30-50 minutes. In the meantime put olive oil in dutch oven add onion and cook until translucent add spices and cook for a few minutes. Remove squash add to the onion along with carrots and garlic. Add water, soup base, salt and pepper along with orange zest. Bring to a slow boil, then turn down to a simmer and allow to cook 20 min. Remove orange zest then whirl with emersion, adjust seasoning and serve. Would be nice with a dollop of creme fraiche or sour cream and some toasted pumpkin seeds
