Crispy Baked Pasta with Mushrooms, Sausage, and Parmesan Cream Sauce

    • 1/4 cup chopped fresh parsley leaves
    • 2 tablespoons finely minced fresh chives
    • 2 small shallots, finely minced (about 1/2 cup)
    • 2 medium cloves garlic, minced (about 2 teaspoons)
    • 2 tablespoons extra-virgin olive oil
    • Kosher salt and freshly ground black pepper
    • 2 tablespoons unsalted butter
    • 8 ounces veggie sausage (mild or hot), removed from casings
    • 1 pound mixed mushrooms (such as portobello, shiitake, and oyster), cleaned and thinly sliced
    • 1 tablespoon soy sauce
    • 1 tablespoon juice from 1 lemon
    • 2 1/2 tablespoons all-purpose flour
    • 2 cups homemade or store-bought veggie stock
    • 1 cup heavy cream
    • 12 ounces fresh or 8 ounces dried ridged pasta such as rotini or campanelle

Bring a large pot of salted water to a boil and keep at a bare simmer. Combine bread crumbs, 2 ounces cheese, half of parsley, half of chives, 1/4 of shallots, and 1/4 of garlic in a medium bowl and massage with hands until combined. Season to taste with salt and pepper

Melt butter in a large cast iron skillet over medium-high heat until foaming. Add sausage and cook, mashing it with a potato masher or a wooden spoon until broken up and well browned, about 7 minutes. Use a slotted spoon to transfer sausage to a small bowl, leaving fat behind.

Increase heat to high, add mushrooms to skillet, and cook, stirring frequently, until moisture has evaporated and mushrooms are well-browned, about 10 minutes. Add shallots and garlic and cook, stirring, until fragrant, about 30 seconds. Add soy sauce and lemon juice and stir to combine.

Add flour and cook, stirring, until a thin film begins to form on the bottom of the pan, about 1 minute. Slowly whisk in chicken broth followed by heavy cream. Bring to a simmer and cook until thickened, about 2 minutes. Stir in remaining grated cheese until melted. Stir in remaining parsley and chives. Stir in sausage. Season to taste with salt and lots of black pepper.

Adjust rack to 10 inches below broiler element and preheat broiler to high. Cook pasta in salted water according to package directions, removing it when still just shy of al dente. Drain, reserving 1 cup of cooking liquid. Return to pot. Add mushroom mixture and stir to combine, adding liquid to adjust consistency. Pasta should be very loose but not soupy. Return to cast iron skillet and top with bread crumbs. Broil until golden brown, rotating pan as necessary, 2 to 3 minutes. Serve immediately.

  • 2 shallots or 1/2 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 pound white or cremini mushrooms, cleaned, trimmed, and quartered or sliced 1/2 inch thick
  • 1 pound wild mushrooms, trimmed and brushed clean, or oyster mushrooms, trimmed and torn into pieces if very large
  •   Salt to taste
  • 2 teaspoons all-purpose flour
  • ½ cup dry white wine such as sauvignon blanc or pinot grigio
  • 2 teaspoons chopped fresh rosemaryor 1 teaspoon dried
  • 2 teaspoons chopped fresh thyme
  •   Freshly ground pepper
  • 2 to 4 tablespoons finely chopped flat-leaf parsley
  1. Place the dried mushrooms in a pyrex measuring cup or a bowl and pour on 2 cups boiling water. Let soak 30 minutes, while you prepare the other ingredients. Place a strainer over a bowl, line it with cheesecloth or paper towels, and drain the mushrooms. Squeeze the mushrooms over the strainer and rinse until they are free of sand. Chop coarsely.
  2. Heat the olive oilover medium heat in a large, heavy skillet or a wide saucepan and add the shallots or onion. Cook, stirring often, until tender, 3 to 5 minutes. Add the garlic, stir together for about 30 seconds, until fragrant, then add the fresh mushrooms, rosemary and thyme, and turn up the heat slightly. Cook until the mushrooms begin to sweat, then add a generous pinch of salt. Stir for about 5 minutes over medium-high heat as the mushrooms continue to soften and sweat. Add the flour and continue to cook the mushrooms, stirring, until they have softened a little more and you can no longer see the flour, about 2 minutes. Add the reconstituted dried mushrooms and the wine and turn the heat to high. Cook, stirring, until the liquid boils down and glazes the mushrooms, about 5 minutes. Stir in the dried mushroom soaking liquid, bring to a simmer, add salt to taste, and cook over medium-high heat, stirring often, until the mushrooms are thoroughly tender and fragrant and the surrounding broth is thick, about 10 to 15 minutes. Remove from the heat, stir in some freshly ground pepper and the parsley, taste and adjust salt.

NOTE

  • Advance preparation: The ragoût can be made up to 3 or 4 days before you wish to serve it. Keep in the refrigerator. Reheat gently on top of the stove.

1 small yellow onion, diced
1 bunch scallions, thinly sliced, white and green parts divided
1 pound mixed mushrooms (I used shitake and cremini), stems removed, thinly sliced
1 inch fresh ginger, peeled and minced
2 garlic cloves, minced
2 teaspoons sambal olek or sriracha
1/4 cup gluten-free tamari
1/4 cup rice vinegar
6 cups vegetable stock
2 tablespoons cornstarch
1 large egg, beaten

Heat the oil in a large stockpot or Dutch oven. Saute the onion and white scallions over medium-high heat until soft, 5 minutes. Add the mushrooms and cook until they’ve reduced in size and begun releasing their liquid, 5 minutes. Stir in the ginger, garlic, and sambal olek or sriracha. Cook until fragrant, 1 more minute.

Carefully pour in the tamari and vinegar (hot vinegar can sting the eyes), scrapping up any brown bits that have formed on the bottom of the pan. Add the stock and bring to a boil. Reduce the heat to medium and simmer for 10 minutes until the flavors have melded. In a small mixing bowl, whisk the cornstarch and 1/3 cup of water to create a slurry. Add it to the pot and simmer the soup until slightly thickened, another 10 minutes.

Remove the soup from the heat and slowly pour in the egg while stirring the liquid. The egg will form soft strings and will cook immediately. Taste the soup and add salt as necessary. Garnish with the green scallions and serve. Serving Size: 4

dmv notes: I cut the recipe in half. Used cremini mushrooms, sambal oblek a little less than half the amount called for and 3 scallions. Very good!!

instant pot instructions:

  1. Add ALL the ingredients to the Instant Pot with the spinach added last EXCEPT for the egg, tofu and cornstarch slurry (those three come later). The pot will be filled to the brim once the spinach is added, so give everything a very good stir and make sure the spinach is mixed in with the broth and everything else
  2. Secure the lid, hit “Manual” or “Pressure Cook” High Pressure for 5 minutes (it will take about 10 minutes to come to pressure due to everything in this loaded pot!) Quick release when done
  3. Once the lid is removed, hit “Sauté” and Adjust so it’s on the “More” or “High” setting.  Once it begins to bubble, add the cornstarch slurry, stir well for about 2 minutes and then turn the Instant Pot to “Keep Warm”
  4. Lastly, add in the tofu and stir followed by the egg mixture and stir for about a minute until egg ribbons form

1 cup sliced onion
1 cup sliced bell peppers (green and red)
1 cup sliced mushrooms
pinch of salt and pepper
4 slices provolone cheese
4 buns

Heat butter in a large skillet over medium heat.
Add onions, peppers, and mushrooms and saute about 10 minutes, until soft.
Season with salt and pepper and divide into four servings within skillet. Top each serving with provolone cheese and cover skillet to allow cheese to melt.
Scoop each serving on to a bun to enjoy.

Creamy Mushroom and Kale Quesadillas

10 oz sliced mushrooms
1 tbsp butter
2 green onions, chopped
2 cups chopped lacinato kale (about 1 bunch)
1/2 tsp minced garlic
3 oz cream cheese
1/4 cup shredded monterey jack cheese
4 “burrito-size” flour tortillas
pinch of salt

Melt the butter over medium heat in a large saucepan. Once melted, add the mushrooms, green onions and a pinch of salt and saute for six minutes, or until soft. Add the garlic and kale and continue sauteing for another three-five minutes, until kale as wilted.

Reduce heat to low and stir in cream cheese to mushroom and kale mixture. Mix well. Remove from heat.

Heat a cast iron (or another large skillet) over medium heat. Place one tortilla on the skillet and add about a quarter cup of the mushroom mixture. Top with a sprinkle of grated cheese and then place other tortilla on top.

Cook quesadillas for about three minutes per side, until golden and cheese is hot and bubbly

Creamy Polenta:
2 cups heavy cream
2 cups milk
1 1/2 teaspoons kosher salt
3 ounces cornmeal, preferably coarse ground (about 2/3 cup)
1 tablespoon unsalted butter
2 tablespoons freshly grated grana padano or Parmigiano-Reggiano
1 teaspoon chopped fresh chives, optional

In a heavy-based saucepan, combine the cream and milk and heat over medium-high heat just until small bubbles begin to appear on the surface. Add the salt, and whisk the cream and milk until quite frothy.

Add the polenta and continue to whisk the mixture as it comes to a boil. Continue whisking for an additional 3 minutes. Reduce the heat to very low, cover the pan, and cook the polenta, stirring every 5 minutes or so (switch to a wooden spoon), until the cornmeal is completely cooked and quite tender, 2 1/2 to 3 1/2 hours. It may seem very thin initially, but it will gradually thicken. As the polenta cooks, a skin will form on the bottom and sides of pan (if you are not using a nonstick pan), which is proper and which gives the polenta a slightly toasty flavor.

Mushrooms:
1/4 cup olive oil
2 medium shallots, thinly sliced
8 ounces mixed domestic and wild mushrooms, sliced or cut into naturally occurring pieces (about 2 cups)
Crushed red pepper
1/2 cup homemade chicken reduction, recipe follows, or purchased chicken reduction, diluted with water until a little thicker than chicken stock Use veggie stcok
1 tablespoon snipped fresh chives
1 teaspoon preserved truffles (optional)

In a large saute pan, heat the oil over medium heat. Add the shallots and cook, stirring, until the shallots just begin to color on their edges. Add the mushrooms and crushed red pepper to taste and cook until the liquid is released. Add the chicken reduction, bring to a boil, reduce to a bubbling simmer and cook until the liquid is reduced by half. (You can prepare the mushrooms ahead up to this point; reheat them over medium-high heat just before serving.)

Just before serving, stir in the butter, grana padano or Parmigiano-Reggiano and chives if using. The polenta should pour from the spoon as you serve it and will thicken as it cools. If necessary, you can thin the polenta with a little milk just before serving. Divide the polenta among heated bowls or plates.

Just before serving, reheat the mushrooms if necessary. Toss the mushrooms with the chives and preserved truffles. Spoon some mushrooms and some of the cooking juices over each serving of polenta.

1/2 ounce (about 1/2 cup) dried porcini mushrooms
4 cups chicken or vegetable stock
1/3 cup EVOO – Extra Virgin Olive Oil, plus more for frying bread, divided
1 pound cremini (baby Portobello) mushrooms, thinly sliced
4 shallots, chopped
4 cloves garlic, chopped
1 bay leaf
2 tablespoons fresh thyme, chopped
Salt and pepper
1 cup marsala
Good quality white, peasant or Italian bread, sliced
1/2 cup flat-leaf parsley, finely chopped
Juice of 1/2 lemon
Grated Parmigiano-Reggiano, for serving

In a medium pot, simmer the porcini mushrooms in the stock to soften, about 10 minutes.

In a soup pot, heat 1/4 cup EVOO over medium-high heat. When the oil begins to ripple, add the mushrooms and cook until lightly browned and tender, 12-15 minutes. Add the shallots, garlic, bay leaf and thyme; season with salt and pepper. Stir until the shallots soften, 2-3 minutes. Add the marsala, scraping the bottom of the pan. Cook until reduced by half.

Remove the porcini mushrooms from the stock, chop, then add to the pot. Pour the porcini stock into the soup pot, being careful not to add the last few spoonfuls where grit may have settled. Add 2 cups water to the pot and simmer until flavors combine, about 10 minutes. Season to taste.

In a skillet, heat a thin layer of EVOO over medium heat. Add the bread and cook until light golden and crisp.
Before serving, stir the parsley and lemon juice into the soup. Place a piece of fried bread in each soup bowl, sprinkle with a little cheese and top with soup.

Meaty Mushroom Veggie Burger – The Least Terrible Veggie Burger Ever!

2 tablespoons olive oil
3 (8 ounce) packages sliced fresh mushrooms
1/2 onion, finely chopped
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
2/3 cup rolled oats
3/4 cup dry bread crumbs
2 eggs, beaten
1/2 cup freshly shredded Parmigiano-Reggiano cheese
2 tablespoons olive oil

Heat 2 tablespoons olive oil in a large skillet over medium heat; add mushrooms, onion, and garlic to the hot oil and season with salt, black pepper, and oregano. Cook and stir mushroom mixture until mushrooms have given up their juice and the juice has almost evaporated, about 10 minutes. Transfer cooked mushrooms to a cutting board and chop into small chunks with a knife.

Transfer mushrooms to a large bowl. Mix in rolled oats and bread crumbs; taste for salt and black pepper and add more to taste. Stir Parmigiano-Reggiano cheese into the mixture, followed by eggs. Let mixture stand for the crumbs to soak up excess liquid, about 15 minutes. (At this point you can refrigerate the mixture to cook later if desired.) Moisten hands with a little vegetable oil or water, pick up about 1/4 cup of mixture, and form into burgers.
Heat remaining 2 tablespoons olive oil in a skillet over medium heat and pan-fry burgers until browned and cooked through, 5 to 6 minutes.

2 cloves minced garlic
2 cups sliced mushrooms
2 tablespoons flour
1/4 cup chicken or vegetable broth
1 teaspoon Worcestershire sauce
1 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup heavy whipping cream or milk
1 large shallot, peeled and sliced thin (I subbed more white onion because I live in a town without shallots)
Salt

Preheat oven to 350F. Have a 1.5-2 quart casserole dish ready.
Bring a large pot of salted water to a boil. Boil green beans for 3 minutes. Drain and quickly run under cold water to stop the cooking. Let dry.

In a large deep skillet, melt 2 tablespoons butter. Add onions, garlic, and mushrooms and saute until onions start to brown and soften. Stir in flour and cook 1 minute. Stir in the broth and Worcestershire sauce. Add the sour cream and stir until melted and smooth. Add the cream/milk and cheese. Stir until the cheese is melted. If the mixture is not thick enough, boil for another few minutes. Add the green beans.

Spoon into the casserole dish and bake 25-30 minutes or until the beans are fork tender.
Meanwhile, separate the shallot slices into rings. In a clean skillet, melt the remaining 2 tablespoons butter and cook the shallots until golden brown. Sprinkle with some salt then place on top of casserole.
