Fish Cakes with Herbs and Chiles from NY Times

download

2 tablespoons olive oil, more for frying
2 garlic cloves, smashed and peeled
1 lb. firm white fish fillets, such as hake, black sea bass or flounder
1 ½ teaspoons kosher salt, more as needed
1/4 teaspoon black pepper
2 tablespoons dry vermouth or white wine
1 lb. russet potatoes, peeled and thinly sliced (2 cups)
2 eggs
3 tablespoons roughly chopped cilantro
3 tablespoons roughly chopped basil
1 scallion, white and green parts, finely chopped
1 serrano chile, seeded and minced
Pinch cayenne
Finely grated zest of 1 small lime
1/3 cup panko bread crumbs
1/2 cup all-purpose flour
3 tablespoons chopped lime pickle or preserved lemon (optional)
1/2 cup mayonnaise
Lime wedges, for serving

In a large skillet over medium heat, heat olive oil. Add garlic and cook until golden brown at the edges, about 2 minutes.

Season fish with 1 teaspoon salt and the pepper, add to pan and let cook for 1 minute. Add vermouth and 2 tablespoons water. Turn heat to low, cover and cook until fish is just barely cooked through, 8 to 10 minutes. Move fish to a plate, keeping any liquid and garlic in skillet.

In the same skillet over high heat, add potatoes, remaining 1/2 teaspoon salt and water to just cover. Bring to a boil, reduce to simmer, cover and cook until tender, about 15 minutes.

Flake fish. Drain potatoes and garlic, and place in a large bowl. Roughly mash potatoes and garlic, then add flaked fish, eggs, cilantro, basil, scallion, chile, cayenne, lime zest and panko, and combine. Season with salt if needed. Cover and chill for at least 3 hours.

Place flour on a plate. Form generous 1/4 cup fish patties about 1/2 inch thick. Dip patties into flour to lightly coat each side.

In a large, preferably nonstick skillet, heat 1/8 inch of olive oil over medium heat. Cook fish cakes until golden brown, about 5 to 8 minutes each side, adding more oil as needed. Move to a paper-towel-lined plate.

If using lime pickle or preserved lemon, stir into mayonnaise. Serve fish cakes with the mayonnaise (with or without pickles) and lime wedges.Serving Size: 6

Really Awesome Black Bean Burgers from seriouseats.com

  • 20140324-black-bean-burger-recipe-food-lab-primary-final-thumb-625xauto-3905202 (15 ounce) cans black beans, rinsed and drained
  • 4 tablespoons vegetable oil, divided
  • 1 medium onion, finely chopped (about 1 cup)
  • 1 large poblano pepper, finely chopped (about 1 cup)
  • 3 medium cloves garlic, minced
  • 1 chipotle chili in adobo sauce, finely chopped, plus 1 teaspoon sauce
  • 3/4 cup roasted cashews
  • 1/2 cup finely crumbled feta or cotija cheese
  • 2 tablespoons mayonnaise
  • 1 whole egg
  • 3/4 cup panko bread crumbs
  • Kosher salt and freshly ground black pepper
  • Cheese as desired, such as pepper jack, cheddar, muenster, or Swiss (optional)
  • 6 to 8 hearty hamburger buns, toasted
  • Condiments as desired, such as Chipotle Mayonnaise, ketchup, mustard, or mayonnaise (optional)
  • Toppings as desired, such as shredded lettuce, sliced onions, and pickles (optional)
  1. Adjust oven rack to center position and preheat oven to 350°F. Spread black beans in a single layer on a foil-lined rimmed baking sheet. Place in oven and roast until beans are mostly split open and outer skins are beginning to get crunchy, about 20 minutes. Remove from oven and allow to cool slightly.

  2. While beans roast, heat 2 tablespoons oil in a medium skillet over medium-high heat until shimmering. Add onion and poblano and cook, stirring frequently, until softened, about 5 minutes. Add garlic and cook, stirring constantly, until fragrant, about 2 minutes. Add chipotle chili and sauce and cook, stirring, until fragrant, about 30 seconds. Transfer mixture to a large bowl.

  3. Place cashews in the bowl of a food processor and pulse until chopped into pieces no larger than 1/3-inch, about 12 short pulses. Add to bowl with onions and peppers.
  4. When beans are slightly cooled, transfer to food processor. Add cheese. Pulse until beans are roughly chopped (the largest pieces should be about 1/3 of a full bean in size). Transfer to bowl with onion/pepper mixture. Add mayonnaise, egg, and bread crumbs and season with salt and pepper. Fold together gently but thoroughly with hands. Patty mixture can be stored in an airtight container in the refrigerator for up to three days at this stage.
  5. To cook indoors: Form bean mixture into 6 to 8 patties as wide as your burger buns. Heat 1 tablespoon oil in a large non-stick or cast iron skillet over medium heat until shimmering. Add 4 patties and cook, swirling pan occasionally, until well browned and crisp on first side, about 5 minutes. Carefully flip and cook until second side is browned, about 5 minutes longer, adding cheese if desired. If cooking more than 4 burgers, cook in batches, keeping cooked burgers on a rack set in a rimmed baking sheet in a 200°F oven while second batch cooks.

  6. Spread top and bottom buns with chipotle mayonnaise or other condiments as desired. Add toppings to top or bottom bun as desired. Place patties on bottom buns, close burgers, and serve immediately.

New Orleans’ Style White Beans

download
1 pound great northern beans, dried
1 medium onion
2 ribs celery
1 small green pepper
4 cloves garlic, minced
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon white pepper
1 tablespoon soy sauce (or gluten-free tamari)
1 teaspoon salt
1 tablespoon Tabasco, or to taste
hickory smoked salt, to taste (optional, but good)

Soak the beans overnight. (Or do a quick-soak by putting them into the pressure cooker with enough water to cover them by three inches. Bring to high pressure and cook for 1 minute. Allow pressure to come down naturally before opening the cooker.)

Drain the soaking liquid. Put the beans into the pressure cooker with 5 cups water and start heating, uncovered.

Meanwhile, chop all vegetables fine, by hand or in a food processor. As you chop each one, add it to the pressure cooker. Add remaining ingredients except Tabasco and hickory smoked salt. Check water level in cooker and add another cup if there isn’t sufficient water to cover all ingredients by 1 inch.

Seal the pressure cooker and set the timer for 12 minutes (electric) or bring to high pressure and cook for 12 minutes once pressure is reached. Remove from heat (or turn off electric cooker) and allow pressure to come down naturally.

If pressure is not down in 20 minutes, quick-release the pressure. Check beans for doneness. They should be tender, and most should be starting to fall apart. If your beans are still tough, return them to high pressure for a few minutes. If beans are tender, add Tabasco and smoked salt and cook uncovered until liquid reduces and the cooking water starts to become more like a sauce. Stir often to make sure they are not burning on the bottom and to incorporate any dried beans on the sides of the pot. After about 20 minutes, if the liquid still seems watery rather than creamy, you can take an immersion blender and blend part of the beans (be sure to remove bay leaves first).Add additional salt to taste. Serve over hot rice with hot sauce on the table.
Servings: 8
Note: To cook in a regular pot, follow all directions, add water to 1-inch over beans, cover, and cook on low until beans are beginning to break down and the water has become a sauce, at least 2 hours. Stir periodically and add more water as needed (several cups may be needed).

Soy Sauce Butter Pasta with Shrimp and Shiitakes from woks of life

soy-sauce-butter-pasta-7
10 oz. dried pasta of your choice (we used thin spaghetti)
olive oil
8 oz. shrimp, peeled, deveined, and thoroughly pat dry
2 cloves garlic, minced
2 shallots, minced
8 oz. shiitake mushrooms (about 10-12), thinly sliced
1/3 cup white wine
3 tablespoons soy sauce (salt levels vary across different brands. Try to find a low sodium version)
3 tablespoons butter
1/4 cup chopped parsley
1/3 cup grated Parmesan cheese
Salt and pepper

Bring a pot of water to a boil for your pasta. Heat 2 tablespoons olive oil in a large skillet over high heat, until the pan is almost smoking. Sear the shrimp just until opaque and crisp on the outside. Remove from pan and set aside.

Reduce heat to medium and add the garlic and shallots. Sautee until beginning to caramelize, about 2 minutes. Add the sliced mushrooms and caramelize, 5-7 minutes. If the pan is looking a little dry, add a bit more olive oil.

Boil pasta according to package directions, drain, and reserve a cup of pasta water. Deglaze the mushrooms with white wine and cook for another two minutes, until most of the liquid has evaporated.

Add the cooked pasta, soy sauce, and butter to the pan and toss until the butter is melted. Add the shrimp, parsley, and Parmesan, and give everything a final toss. Loosen it up with a bit of your reserved pasta water if needed. Add salt and pepper to taste (remember that soy sauce is quite salty, so you may not need any more salt at all), and serve. 4 servings

dmv note: I substituted red onion for shallots and button with cremini mushrooms for shitake.
