1 1/4 cups Almond Milk
1/2 cup Old Fashioned Rolled Oats
2 tablespoons Cocoa Powder
2 tablespoons Brown Sugar1 teaspoon Cinnamon

In a pot over high heat, bring the almond milk to a boil, and then whisk in the oats. Reduce to a simmer.10 Almonds (chopped)

Stir in the cocoa powder, brown sugar, cinnamon, and salt until incorporated. Simmer until oatmeal has thickened to desired consistency. Adjust seasoning to taste, and serve garnished with chopped almonds.

Oats go in while the almond milk is whole so the flavor blooms.

Sour Cream Apple Walnut Cake, Christine Babcock

3 cups All-Purpose Flour
1 teaspoon soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 large eggs
1/2 cup butter, melted
1/2 cup vegetable oil
2 cups sugar
1 cup sour cream
2 teaspoons vanilla extract
3 cups peeled, chopped apples
1 1/2 cups chopped walnuts

Cream Cheese Glaze
4 ounces cream cheese
2 cups powdered sugar
1 teaspoon vanilla extract
2 to 3 tablespoons milk

1. HEAT oven to 325º F. Grease and flour 10-inch tube pan. Whisk together flour, soda, salt and cinnamon in large bowl. Set aside. Beat eggs in large bowl. Stir in butter, oil, sugar, sour cream and 2 teaspoons vanilla. Stir in flour mixture just until blended. Stir in apples and walnuts until well blended. Spoon batter into prepared pan.

2. BAKE 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan. Cool completely. NOTE it took a lot longer than time listed!!

3. BEAT cream cheese until fluffy. Beat in powdered sugar and 1 teaspoon vanilla. Add enough milk to make desired consistency to spoon over cake. Store in refrigerator.

NOTE: cake required much more than 1 hour and 10 min., next time I may increase the oven temp to 350. Perhaps my oven temp is off I will check this as well.

dark chocolate bark, ina garten

9.5 ounces very good semisweet chocolate, finely chopped
8 ounces very good bittersweet chocolate, finely chopped
1 cup whole roasted, salted cashews
1 cup dried apricots, chopped
1/2 cup dried cranberries

Melt the two chocolates in a heatproof bowl set over a pan of simmering water.

Meanwhile, line a sheet pan with parchment paper. Using a ruler and a pencil, draw a 9-by-10-inch rectangle on the paper. Turn the paper face-down on the baking sheet.

Pour the melted chocolate over the paper and spread to form a rectangle, using the outline. Sprinkle the cashews, apricots and cranberries over the chocolate. Set aside for 2 hours until firm. Cut the bark in 1-by-3-inch pieces and serve at room temperature.

Cranberry Bread, family favorite from Fanny Farmer

1 orange
2 tablespoons butter
1 egg
1 cup sugar
1 cup cranberries, chopped
1/2 cup chopped walnuts
2 cups white flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 tsp salt

Grate the rind of 1 orange.
Squeeze the juice and add enough boiling water to make ¾ c. of liquid.
Add the grated rind and butter, stir to melt.
Put in another bowl  egg and sugar. Beat well and stir into the orange mixture.
Add the chopped cranberries and walnuts
Sift together flour,baking soda and  salt. Stir into the first mixture.
Spoon into a butter loaf pan (9 x 5). Bake 1 hour @ 325 degrees.

Cranberry Pie, family favorite from Aunt Nan

Pre-bake 9 inch pie shell for 5-8 minutes in 425 degree oven.

Then add the following:

2 c. Cranberries-
1 c. currents or raisins
1 c. sugar-            Mix together and place in pie shell
2 tbsp. Flour-
pinch of salt-

1 tsp. Almond flavoring-
½ tsp. Vanilla extract-              Mix together and sprinkle over above
¾ c. boiling water-

Bake at 400 degrees for 10 minutes, turn down to 350 degrees and bake for an additional 30-45 minutes or longer, or until the center bubbles pink.

5 Granny Smith apples, peeled and sliced
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
Juice of 1/2 lemon
1 recipe Perfect Pie Crust, recipe follows
6 tablespoons butter
Preheat the oven to 375 degrees F.

In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.

With a rolling pin, begin rolling out the Perfect Pie Crusts into large circles. Roll the dough from the center outward. Be gentle and patient, it’ll take a little time to get the dough completely rolled out.

If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes, no back-and-forth rolling.

Again with a spatula, loosen and lift the dough and carefully place the circles on large baking sheets.

Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic – the more rustic the better. Dot the tops of the pies with chunks of the butter.

Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminium foil for the remaining baking time.

Allow to cool slightly, then slice into wedges with a pizza cutter. Eat ’em on the go!

Perfect Pie Crust:
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 sticks cold butter
3/4 cup vegetable shortening
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar
Combine the flour and salt in a large bowl. Add in the butter and shortening. Using a pastry cutter, gradually work the butter and shortening into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.

Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it’s just combined, and then remove half the dough from the bowl. Yield: dough for 2 crusts.

Upside-Down Pear Gingerbread, Mary Mizwa(food & wine)

This is a really fabulous fall dessert. It’s very dense and molasses-y, and beautiful because the pear slices form a pinwheel design on top. The recipe is from cookbook author Jeanne Lemlin.

The topping:
4 tablespoons (1/2 stick) unsalted butter
1/2 cup firmly packed light or dark brown sugar
2 ripe but firm pears, preferably Bosc or Anjou

The cake:
1 cup unbleached flour
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 egg
1/2 cup firmly packed light or dark brown sugar
1/3 cup molasses
1/2 cup sour milk
4 tablespoons melted butter

Lightly sweetened whipped cream (spiked with rum or brandy)

1. Preheat the oven to 350 degrees. Butter the sides of a 9-inch round cake pan (not springform).

2. To prepare the topping, melt the butter in a small saucepan. Add the brown sugar and stir together until blended. Scrape into the pan and spread evenly.

3.Peel and slice each pear into quarters, then remove and discard the cores. Slice each quarter into 3 slices. Arrange the 24 slices evenly around the pan.

4.To make the cake, in a large bowl combine the flour, baking soda, salt, cinnamon, ginger, and cloves. In a separate bowl beat together the egg, brown sugar, molasses, sour milk, and melted butter. Scrape into the flour mixture and mix until well blended.

5. Pour the batter over the pears. Bake 30 minutes, or until a knife inserted in the center of the cake comes out clean. Cool on a wire rack for 10 minutes, then invert onto a plate. Serve slightly warm or at room temperature with the whipped cream. serves 8

Pumpkin Strudel, Carla Hall

1 15-ounce can of Pumpkin Puree
1/2 cup Brown Sugar
1/2 teaspoon Cinnamon
1/2 teaspoon ground Ginger
1/4 teaspoon Nutmeg
1/4 teaspoon Allspice
1/4 teaspoon Cloves
1 teaspoon Salt
12 sheets Frozen Phyllo (thawed)
Melted Butter (for brushing)
1 cup Granulated Sugar
1 1/2 tablespoons Cinnamon
1 cup toasted Pecans (chopped)
1 8-ounce package Cream Cheese (divided into 12 pieces)
Whipped Cream (optional)

Preheat oven to 400. In a small bowl, combine pumpkin, brown sugar, cinnamon, ginger, nutmeg, allspice, cloves and 1/2 teaspoon salt. In another small bowl combine the granulated sugar and the cinnamon.

Brush one sheet of phyllo with melted butter and lay another sheet of dough on top. Brush generously with melted butter. (Keep remaining phyllo dough covered with a damp dish towel to prevent it from drying out). Sprinkle a generous 2 tablespoons of cinnamon-sugar mixture over the brushed phyllo. Sprinkle with about 2 tablespoons of pecans.

Cut the phyllo lengthwise to create two long strips. Place a slice of cream cheese about 2 inches from the end of each dough strip. Spoon 1 to 2 well rounded tablespoon of pumpkin mixture on top of the cream cheese (do not overfill or the phyllo will burst when rolled).

To shape, fold the edge closest to the cheese/pumpkin mixture up and over the filling. Fold in sides and roll up to encase filling. Place on a parchment lined baking sheet, seam side down. Brush with some of the melted butter and top more sugar and nuts. Repeat the process with the remaining ingredients.

Bake for 20 minutes or until golden. Remove from oven and allow to cool for 5 minutes before serving with whipped cream. Note: You can use 2 teaspoons Pumpkin Pie Spice in place of the other spices.

Helpful Tips:
1. Only use a little bit of the clove because the flavor is very strong and can easily overpower the dish.
2. Take care not to roll the strudel too tightly or it will rip while baking.
3. Prepare the strudel ahead of time and freeze until you’re ready to bake.

Mémé’s Apple Tart, Jacque Pepin

Chef Jacques Pépin remembers well the famous apple tart his mother made every day as a dessert offering in her small Lyons restaurant, Le Pélican. Unlike any other dough, hers achieved its tender, crumbly, airy texture from the combination of vegetable shortening, baking powder and warm milk mixed with the flour. He hopes you enjoy this taste he associates with food memories from his youth.

DOUGH

  1. 1/4 cup milk
  2. 1 1/4 cups all-purpose flour
  3. 1 teaspoon sugar
  4. 1/2 teaspoon baking powder
  5. 1/8 teaspoon salt
  6. 6 tablespoons solid vegetable shortening, such as Crisco

FILLING

  1. 2 pounds sweet medium apples, such as Golden Delicious
  2. 3 tablespoons sugar
  3. 2 tablespoons unsalted butter, cut into small pieces
  4. In a small pan, heat the milk to lukewarm. In a bowl, mix together the flour, sugar, baking powder and salt. Add the shortening and mix with a spoon or with your hands until the mixture feels and looks sandy. Add the warm milk and mix rapidly until the dough forms a ball.

    3. Preheat the oven to 400°. Peel, quarter and core the apples. Cut them into 1-inch-thick wedges. Arrange the apple wedges in a concentric circle on the dough and sprinkle evenly with the sugar and butter.
    4. Set the tart on a baking sheet and bake for about 1 hour, or until the apples are tender and the pastry is golden. Cover the tart loosely with foil after 45 minutes to prevent over-browning. Cut the tart into wedges and serve warm.

    Serve with salted carmel sauce

    MAKE AHEAD The dough can be refrigerated for up to 1 day.

The Lee Bros. Charleston Kitchen’s Huguenot Torte

  • 2 Large Eggs
  • 1 1/3 cups Sugar
  • 1/4 cup All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Kosher Salt
  • 1 Granny Smith Apple (cored; peeled and diced; 1 cup)
  • 1 cup chopped Pecans
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 cup Heavy Cream
  • 2 tablespoons Whole Buttermilk or Sour Cream
  • Preheat the oven to 325F. Grease a 2-quart baking dish.
  • In a large bowl, beat the eggs with a whisk until they’re creamy and frothy. Add the sugar, flour, baking powder, salt, apple, pecans, and vanilla, whisking to combine after each addition.
  • Pour the batter into the prepared baking dish and bake for 45 minutes, or until the top of the torte is crusty. Remove the torte from the oven and let cool for about 10 minutes.
  • Whip the cream with the buttermilk until stiff peaks form. Cut into individual portions – they will be lumpen and misshapen, with shards of crust and spoonfuls of ooze, but no matter – and serve with dollops of the whipped cream.
