{"id":8026,"date":"2024-04-20T12:23:05","date_gmt":"2024-04-20T16:23:05","guid":{"rendered":"https:\/\/mimbly.com\/wordpress\/?p=8026"},"modified":"2024-04-20T12:33:07","modified_gmt":"2024-04-20T16:33:07","slug":"salmon-avocado-watercress-and-pumpkin-seed-salad-by-nigella","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2024\/04\/20\/salmon-avocado-watercress-and-pumpkin-seed-salad-by-nigella\/","title":{"rendered":"SALMON, AVOCADO, WATERCRESS AND PUMPKIN SEED SALAD By Nigella"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Serves: 2, generously<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><a href=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2024\/04\/IMG_0970.jpeg\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"840\" src=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2024\/04\/IMG_0970.jpeg\" alt=\"\" class=\"wp-image-8027\" srcset=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2024\/04\/IMG_0970.jpeg 600w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2024\/04\/IMG_0970-214x300.jpeg 214w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">FOR THE SALMON<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 Alaskan, organic or ASC-certified Scottish salmon fillets<\/li>\n\n\n\n<li>2 spring onions (trimmed)<\/li>\n\n\n\n<li>1 teaspoon black peppercorns<\/li>\n\n\n\n<li>2\u00bd teaspoons fresh lime juice<\/li>\n\n\n\n<li>2 teaspoons Maldon sea salt flakes<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">FOR THE SALAD<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 tablespoons pumpkin seeds<\/li>\n\n\n\n<li>100 grams watercress<\/li>\n\n\n\n<li>1 teaspoon organic cloudy apple cider vinegar<\/li>\n\n\n\n<li>1 small ripe avocado<\/li>\n\n\n\n<li>1 tablespoon cold-pressed rapeseed oil or extra-virgin olive oil<\/li>\n\n\n\n<li>1 teaspoon Maldon sea salt flakes or to taste<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Put the salmon fillets in a small frying pan (I use one with a 20cm \/ 8in diameter) and cover with cold water from the tap. Add the whole spring onions and peppercorns, squeeze in the lime juice and sprinkle in the salt, then bring to the boil, uncovered. When the pan is bubbling, turn the fillets over, then remove the pan from the heat and leave to stand for 7 minutes. Then take the fillets out of the liquid and leave to cool completely, which could take up to 1 hour. Once cool, the salmon will be cooked through, with its flesh desirably tender and coral inside.<\/li>\n\n\n\n<li>While the salmon\u2019s cooling, make a start on the salad. Toast the pumpkin seeds by tossing them in a dry, heavy-based frying pan on the hob. They will start jumping a little, and will darken and get a smokier taste. It doesn\u2019t take long to toast them, so don\u2019t leave the pan and, indeed, keep giving it a quick swirl. Then transfer to a cold plate.<\/li>\n\n\n\n<li>When you\u2019re ready to unite salmon with salad, put the watercress into a large shallow bowl (or split between 2 bowls), sprinkle with the vinegar, and toss. Now add the salmon, removing the skin and tearing the fish into bite-sized pieces or shreddy bits, as you wish.<\/li>\n\n\n\n<li>Halve the avocado and remove the stone, then spoon the flesh out onto the salmon and watercress, or cut it into slices if you prefer. Drizzle the oil over the salad, sprinkle with the salt and half of the toasted pumpkin seeds, and toss gently to mix.
