{"id":6919,"date":"2019-07-21T12:45:02","date_gmt":"2019-07-21T16:45:02","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=6919"},"modified":"2019-10-02T16:06:53","modified_gmt":"2019-10-02T20:06:53","slug":"two-person-raspberry-crumbles","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2019\/07\/21\/two-person-raspberry-crumbles\/","title":{"rendered":"two person raspberry crumbles from pinch of yum"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"683\" height=\"1024\" src=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2019\/07\/Two-Person-Raspberry-Crisp-Layers-683x1024.jpg\" alt=\"\" class=\"wp-image-6920\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><br>Berry Mixture:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 1\/2 cups of&nbsp;<strong>fresh or frozen berries<\/strong>&nbsp;(I have thoughts \u2013 see notes!)<\/li><li>2 tablespoons&nbsp;<strong>sugar<\/strong>&nbsp;(more or less depending on the tartness of your berries)<\/li><li>1\/2 tablespoon&nbsp;<strong>cornstarch<\/strong><\/li><li>squeeze of&nbsp;<strong>lemon juice<\/strong><\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crumble Layer:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>4 tablespoons&nbsp;<strong>butter<\/strong>, melted<\/li><li>1\/2 cup&nbsp;<strong>oats<\/strong><\/li><li>1\/2 cup&nbsp;<strong>flour<\/strong><\/li><li>1\/4 cup&nbsp;<strong>brown sugar<\/strong><\/li><li>1\/4 teaspoon&nbsp;<strong>baking powder<\/strong><\/li><li>pinch of&nbsp;<strong>salt<\/strong><\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li><strong>Prep:<\/strong>&nbsp;Preheat the oven to 350 degrees.<\/li><li><strong>Mix:<\/strong>&nbsp;Gently mix up the berry mixture. Mix up the crumble in a separate bowl.<\/li><li><strong>Bake Part One:<\/strong>&nbsp;Press about two-thirds of the crumble into the bottom of two 4-inch ramekins. Bake for 5 minutes to set the crust (more for a firmer crust).<\/li><li><strong>Bake Part Two:<\/strong>&nbsp;Pour the berry filling over the crusts. Sprinkle the remaining crumble on top of each ramekin. Bake for 7-10 more minutes, until the fruit layer is bubbling and the crumbles are golden brown.<\/li><li><strong>Live It Up:<\/strong>&nbsp;Cooling for ten minutes is a good idea, but if you told me that it\u2019s just not humanly possible, I would understand. Grab a fork, dive into the juicy, buttery layers, and never look back.<\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Berries:<\/strong>&nbsp;frozen raspberries or mixed berries work great for a really jammy, juicy fruit layer. If you\u2019re using frozen berries, you need to thaw them first. I usually just run them under warm water. Fresh raspberries and blueberries also work really well because they kind of burst and release their juices a bit while baking.
