{"id":5660,"date":"2017-02-02T19:20:26","date_gmt":"2017-02-03T00:20:26","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=5660"},"modified":"2017-02-02T19:20:26","modified_gmt":"2017-02-03T00:20:26","slug":"crusty-baked-shells-cauliflower-from-ina","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2017\/02\/02\/crusty-baked-shells-cauliflower-from-ina\/","title":{"rendered":"Crusty Baked Shells &#038; Cauliflower from Ina"},"content":{"rendered":"<div class=\"l-two-col__left__secondary divider\">\n<h3 class=\"recipe__section-heading\"><a href=\"https:\/\/mimbly.com\/wordpress\/?attachment_id=5661\" rel=\"attachment wp-att-5661\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-5661\" src=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2017\/02\/download.jpeg\" alt=\"\" width=\"225\" height=\"225\" srcset=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2017\/02\/download.jpeg 225w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2017\/02\/download-150x150.jpeg 150w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/h3>\n<ul class=\"ingredients-list\">\n<ul class=\"ingredients-list\">\n<li class=\"ingredients-list__item\">Kosher salt<\/li>\n<li class=\"ingredients-list__item\">Freshly ground black pepper<\/li>\n<li class=\"ingredients-list__item\">3\/4 pound medium shells, such as Barilla<\/li>\n<li class=\"ingredients-list__item\">Good olive oil<\/li>\n<li class=\"ingredients-list__item\">2 1\/2 pounds cauliflower, cut into small florets (1 large head)<\/li>\n<li class=\"ingredients-list__item\">3 tablespoons roughly chopped fresh sage leaves<\/li>\n<li class=\"ingredients-list__item\">2 tablespoons capers, drained<\/li>\n<li class=\"ingredients-list__item\">1 tablespoon minced garlic (3 cloves)<\/li>\n<li class=\"ingredients-list__item\">1\/2 teaspoon grated lemon zest<\/li>\n<li class=\"ingredients-list__item\">1\/4 teaspoon crushed red pepper flakes<\/li>\n<li class=\"ingredients-list__item\">2 cups freshly grated Italian Fontina Val d\u2019Aosta cheese, lightly packed (10 ounces with rind)<\/li>\n<li class=\"ingredients-list__item\">1 cup (8 ounces) fresh ricotta<\/li>\n<li class=\"ingredients-list__item\">1\/2 cup panko (Japanese bread flakes)<\/li>\n<li class=\"ingredients-list__item\">6 tablespoons freshly grated Italian Pecorino cheese<\/li>\n<li class=\"ingredients-list__item\">2 tablespoons minced fresh parsley leaves minced<\/li>\n<\/ul>\n<\/ul>\n<div class=\"l-two-col__left__primary\">\n<section class=\"divider\">\n<ol class=\"steps-list\">\n<li class=\"steps-list__item\">Preheat the oven to 400\u00b0.<\/li>\n<li class=\"steps-list__item\">Fill a large pot with water, add 2 tablespoons of salt and bring to a boil. Add the pasta and cook until al dente, according to the instructions on the package. Since it will be baked later, don\u2019t overcook it! Drain and pour into a very large bowl.<\/li>\n<li class=\"steps-list__item\">Meanwhile, heat 3 tablespoons of olive oil in a large (12-inch) saut\u00e9 pan over medium-high heat, add half of the cauliflower in one layer and saut\u00e9 for 5 to 6 minutes, tossing occasionally, until the florets are lightly browned and tender. Pour the cauliflower, including the small bits, into the bowl with the pasta. Add 3 more tablespoons of olive oil to the saut\u00e9 pan, add the remaining cauliflower, cook until browned and tender and add to the bowl.<\/li>\n<li class=\"steps-list__item\">Add the sage, capers, garlic, lemon zest, red pepper flakes, 2 teaspoons salt and 1 teaspoon black pepper to the bowl and stir carefully. Stir in the Fontina. Transfer half of the mixture to a 10 x 13 x 2\u2013inch rectangular baking dish. Spoon rounded tablespoons of ricotta on the pasta and spoon the remaining pasta mixture on top. Combine the panko, Pecorino, parsley and 1 tablespoon of olive oil in a small bowl and sprinkle it evenly on top. Bake for 25 to 30 minutes, until browned and crusty on top.
