Bring wine, oil, salt, lemon juice, butter, red pepper flakes, sugar, bay leaf, and 8 cups water to a boil in a large pot.<\/li>\n<li>Remove leaves and cut out the center core to create a flat surface for cauliflower to balance, making sure to leave the head intact.<\/li>\n<li>Carefully lower in cauliflower, reduce heat, and simmer, turning occasionally, until a knife easily inserts into center, 15 to 20 minutes.<\/li>\n<li>Using 2 slotted spoons or a mesh strainer or spider, transfer cauliflower to a rimmed baking sheet or roasting pan, draining well.<\/li>\n<li>Roast, rotating pan halfway through, until brown all over, 30 to 40 minutes.<\/li>\n<li>Transfer cauliflower to a plate. Drizzle with oil; sprinkle with sea salt. Serve with whipped goat cheese (recipe below).<\/li>\n<\/ol>\n<\/section>\n<section class=\"clearfix\">\n<p class=\"recipe-list-header\"><strong>Whipped Goat Cheese<\/strong><\/p>\n<ul class=\"recipe-list\">\n<li><span class=\"recipe-list-quantity\">4\u00a0<\/span><span class=\"recipe-list-item-name\">ounces fresh goat cheese<\/span><\/li>\n<li><span class=\"recipe-list-quantity\">3\u00a0<\/span><span class=\"recipe-list-item-name\">ounces cream cheese<\/span><\/li>\n<li><span class=\"recipe-list-quantity\">3\u00a0<\/span><span class=\"recipe-list-item-name\">ounces feta cheese<\/span><\/li>\n<li><span class=\"recipe-list-quantity\">1\/3\u00a0<\/span><span class=\"recipe-list-item-name\">cup heavy cream<\/span><\/li>\n<li><span class=\"recipe-list-quantity\">2\u00a0<\/span><span class=\"recipe-list-item-name\">tablespoons olive oil plus more for serving<\/span><\/li>\n<\/ul>\n<ol>\n<li>Blend goat cheese, cream cheese, feta, cream, and 2 tablespoons olive oil in a food processor until smooth; season with sea salt.<\/li>\n<li>Transfer whipped goat cheese to a serving bowl and drizzle with olive oil.<\/li>\n<li>Note: Whipped goat cheese can be made one day ahead.
