{"id":4879,"date":"2015-12-07T15:46:53","date_gmt":"2015-12-07T20:46:53","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=4879"},"modified":"2015-12-07T15:51:20","modified_gmt":"2015-12-07T20:51:20","slug":"cashew-shrimp-stir-fry-from-thewoksoflife-com","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2015\/12\/07\/cashew-shrimp-stir-fry-from-thewoksoflife-com\/","title":{"rendered":"Cashew Shrimp Stir-fry from thewoksoflife.com\/"},"content":{"rendered":"<div class=\"item b-b\">\n<div class=\"b-b h-1 strong\"><a href=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2015\/12\/shrimp-cashews-8.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-4880\" src=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2015\/12\/shrimp-cashews-8-200x300.jpg\" alt=\"shrimp-cashews-8\" width=\"200\" height=\"300\" srcset=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2015\/12\/shrimp-cashews-8-200x300.jpg 200w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2015\/12\/shrimp-cashews-8.jpg 600w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/a><\/div>\n<div id=\"zlrecipe-title\" class=\"b-b h-1 strong\">8 oz. medium shrimp, peeled and deveined<\/div>\n<\/div>\n<div id=\"zlrecipe-ingredient-1\" class=\"ingredient\">1 1\/4 teaspoon sugar, divided<\/div>\n<div id=\"zlrecipe-ingredient-2\" class=\"ingredient\">1\/8 teaspoon baking soda<\/div>\n<div id=\"zlrecipe-ingredient-3\" class=\"ingredient\">1\/4 cup water<\/div>\n<div id=\"zlrecipe-ingredient-4\" class=\"ingredient\">1\/2 teaspoon sesame oil<\/div>\n<div id=\"zlrecipe-ingredient-5\" class=\"ingredient\">1 teaspoon cornstarch<\/div>\n<div id=\"zlrecipe-ingredient-6\" class=\"ingredient\">salt and white pepper<\/div>\n<div id=\"zlrecipe-ingredient-7\" class=\"ingredient\">4 stalks celery, sliced at a 45 degree angle<\/div>\n<div id=\"zlrecipe-ingredient-8\" class=\"ingredient\">1\/2 of a red bell pepper, sliced<\/div>\n<div id=\"zlrecipe-ingredient-9\" class=\"ingredient\">1 1\/2 tablespoons oil<\/div>\n<div id=\"zlrecipe-ingredient-10\" class=\"ingredient\">2 slices ginger, minced<\/div>\n<div id=\"zlrecipe-ingredient-11\" class=\"ingredient\">1 scallion, chopped<\/div>\n<div id=\"zlrecipe-ingredient-12\" class=\"ingredient\">2 teaspoons oyster sauce<\/div>\n<div id=\"zlrecipe-ingredient-13\" class=\"ingredient\">3\/4 cup roasted cashews<\/div>\n<p class=\"instruction\">\n<p id=\"zlrecipe-instruction-0\" class=\"instruction\">First, prepare the shrimp. Toss the shrimp with 1 teaspoon sugar, baking soda, and 1\/4 cup water, gently mixing everything together for a couple minutes. Cover and refrigerate for 2 hours and then rinse under cold running water for 5 minutes to wash away any sugar and baking soda. Pat the shrimp dry thoroughly with a paper towel. Marinate the shrimp with 1\/2 teaspoon sesame oil, 1 teaspoon cornstarch, 1\/4 teaspoon salt and pinch of white pepper and set aside while you prepare the rest of the ingredients.<\/p>\n<p id=\"zlrecipe-instruction-1\" class=\"instruction\">Now, since the dish comes together very quickly, and you want to avoid overcooking the shrimp, it&#8217;s time to blanch the celery and red bell pepper. Bring a pot of water to a boil and drop the celery and red bell pepper in. After 30 seconds, drain the vegetables and shock them in ice water. Drain completely and set aside.<\/p>\n<p id=\"zlrecipe-instruction-2\" class=\"instruction\">Heat 1 1\/2 tablespoons oil in a wok over medium heat. Add the minced ginger and chopped scallion and cook for 1 minute. Then turn up the heat to high and add the shrimp. Once the shrimp have just begun to turn pink, add the blanched celery and red bell pepper, along with the last 1\/4 teaspoon sugar, the oyster sauce, and the cashews. Mix everything well, and season to taste with salt and white pepper. Serve.<\/p>\n<div id=\"zlrecipe-notes-list\">\n<p class=\"notes\">Note: It&#8217;s ideal to use roasted cashews for this recipe, but I only had raw cashews, so I just wok-roasted them for about 10 minutes. I\u2019ve learned that cashews burn easily, so when roasting, start with a cold wok and medium low heat. Add 1 tablespoon oil and then the cashews. Toast the cashews for about 10 minutes, stirring often and taking care not to burn them.
