Serve on endive; use as\u00a0<\/span><span class=\"s1\">a dip, or as a topping for crostini,\u00a0<\/span><span class=\"s1\">steamed fish or baked potatoes.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Fresh Tomato Salad Pizza:<br \/>\n<\/span><span class=\"s1\">Top pizza dough with Fontina and Parmesan cheese: bake until cheese\u00a0<\/span><span class=\"s1\">melts and crust is golden. Top with sliced tomatoes, salad greens,\u00a0<\/span><span class=\"s1\">sliced green olives and a drizzle of dressing.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Florida Tomato Toast:<br \/>\n<\/span><span class=\"s1\">Spread mayonnaise onto bread slices then place thinly sliced tomatoes\u00a0<\/span><span class=\"s1\">on top (one or two layers). Sprinkle grated mozzarella on top. Bake<\/span><span class=\"s1\">in oven at 350 degrees F, about 15 minutes.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Roasted Tomatoes:<br \/>\n<\/span><span class=\"s1\">Cut tomatoes in halves; squeeze to release seeds. Place on a rack on\u00a0<\/span><span class=\"s1\">a shallow pan, cut-side down. Bake at 450 degrees F, until skin<br \/>\n<\/span><span class=\"s1\">blisters, about 20 minutes.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Upside-Down Tomato Cornbread:<br \/>\n<\/span><span class=\"s1\">Line greased skillet with season tomato slices; pour cornbread batter\u00a0<\/span><span class=\"s1\">over tomatoes; cook until bread is done, then invert.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Caribbean Jerk Tomato Salad:<br \/>\n<\/span><span class=\"s1\">Lightly grill tomato wedges brushed with a mixture of oil and jerk\u00a0<\/span><span class=\"s1\">seasoning; toss with sliced avocado, hearts of palm and chunks of\u00a0<\/span><span class=\"s1\">cool, cooked chicken or pork.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Charred Tomatoes with Garlic and Olives:<br \/>\n<\/span><span class=\"s1\">Broil whole tomatoes until slightly charred, about 10 minutes. Remove\u00a0<\/span><span class=\"s1\">skins; chop flesh roughly. Transfer to a pan; add halved garlic\u00a0<\/span><span class=\"s1\">cloves, olive oil and salt: roast at 400 degrees F, until thickened\u00a0<\/span><span class=\"s1\">and flecked with dark bits, about 1 hour. Serve drizzled with more\u00a0<\/span><span class=\"s1\">olive oil and chopped ripe olives. Use as a dip with pita breads.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Thai Tomato Spring Rolls:<br \/>\n<\/span><span class=\"s1\">Wrap a mixture of chopped tomatoes, mint, pork tenderloin, lemongrass\u00a0<\/span><span class=\"s1\">and peanuts in wrappers. Serve with spicy soy dipping sauce.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Fried Pink Tomato Sandwiches:<br \/>\n<\/span><span class=\"s1\">Saute flour or cornmeal-dusted slices of pink tomatoes then place of\u00a0<\/span><span class=\"s1\">rounds of polenta that have been seasoned with basil.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Little Tomato Goat Cheese Souffles:<br \/>\n<\/span><span class=\"s1\">Fill tomatoes with a basic souffle mixture made with goat cheese and\u00a0<\/span><span class=\"s1\">chives.
