{"id":3117,"date":"2014-06-15T22:03:50","date_gmt":"2014-06-16T02:03:50","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=3117"},"modified":"2014-06-15T22:04:32","modified_gmt":"2014-06-16T02:04:32","slug":"lentil-shepherds-pie-by-simon-bryant","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2014\/06\/15\/lentil-shepherds-pie-by-simon-bryant\/","title":{"rendered":"Lentil shepherd&#8217;s Pie by Simon Bryant"},"content":{"rendered":"<p style=\"color: #000000;\"><a href=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/06\/r305035_1330797.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3118\" src=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/06\/r305035_1330797.jpg\" alt=\"r305035_1330797\" width=\"450\" height=\"338\" srcset=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/06\/r305035_1330797.jpg 450w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/06\/r305035_1330797-300x225.jpg 300w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/06\/r305035_1330797-399x300.jpg 399w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">\n<p style=\"color: #000000;\">30ml olive oil<br \/>\n1 onion diced<br \/>\n3 garlic cloves<br \/>\n3 stalks celery diced (and heart)<br \/>\n3 bay leaves<br \/>\n6 sprigs thyme<br \/>\n1 tsp Carroway seeds<br \/>\nSprig of rosemary<br \/>\n200g mushrooms diced<br \/>\n2 tbls tomato paste<br \/>\n1 can diced tomtatoes<br \/>\n300g brown lentils (soaked for several hours overnight, simmer from cold in just enough<br \/>\nveggie stock to cover &amp; cook till just soft, do not drain)<br \/>\n100g green beans sliced into 1cm pieces<br \/>\n2 carrots diced<br \/>\n1 litre Veg stock or water<br \/>\n25 ml red wine vinegar<br \/>\n1 tbls Lemon zest<br \/>\nHandful of dried wild mushroom mix, ground to fine powder(optional for extra flavour)<br \/>\n1\/3 bunch parsley chopped<br \/>\nSalt and pepper to taste<\/p>\n<p><b>Mashed potatoes\u00a0<\/b><br \/>\n500g potatoes<br \/>\nSalt and white pepper<br \/>\n80g butter<br \/>\n100ml Milk<br \/>\n1 \u00a0tsp Mace<br \/>\n1\/4 cup Parmesan<\/p>\n<p style=\"color: #000000;\">Heat the oil in a large frypan and add the onion and garlic and saute for a few minutes. Add the celery, carrot, carroway seeds, rosemary, bay leaves and thyme.
