{"id":2599,"date":"2014-01-16T16:59:11","date_gmt":"2014-01-16T21:59:11","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=2599"},"modified":"2014-01-16T16:59:11","modified_gmt":"2014-01-16T21:59:11","slug":"butternut-squash-stew-with-pomegranate-salsa-by-the-weekend-vegetarian","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2014\/01\/16\/butternut-squash-stew-with-pomegranate-salsa-by-the-weekend-vegetarian\/","title":{"rendered":"Butternut Squash Stew With Pomegranate Salsa by the weekend vegetarian"},"content":{"rendered":"<p><a href=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/01\/food431389277506.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/01\/food431389277506-300x199.jpg\" alt=\"food431389277506\" width=\"300\" height=\"199\" class=\"alignleft size-medium wp-image-2600\" srcset=\"https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/01\/food431389277506-300x199.jpg 300w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/01\/food431389277506-450x300.jpg 450w, https:\/\/mimbly.com\/wordpress\/wp-content\/uploads\/2014\/01\/food431389277506.jpg 982w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nFOR THE STEW<br \/>\n1 tablespoon extra-virgin olive oil<br \/>\n2 teaspoons ground coriander<br \/>\n1 teaspoon ground cinnamon<br \/>\n1 teaspoon ground turmeric<br \/>\n1\/2 teaspoon ground cardamom<br \/>\n1\/2 teaspoon ground cloves<br \/>\n1 large onion, chopped<br \/>\n1-inch piece peeled ginger root, grated<br \/>\n3 cloves garlic, finely chopped<br \/>\n1 serrano chili pepper, seeded and chopped<br \/>\n28 ounces canned diced tomatoes, preferably low-sodium or no-salt-added, plus their juices<br \/>\n1 large carrot, scrubbed well and cut into 1\/2-inch pieces<br \/>\n1 medium (about 1 1\/2 pounds) butternut squash, peeled, seeded and cut into 1\/2-inch pieces<br \/>\nWater (optional)<br \/>\n4 to 5 ounces baby spinach leaves, chopped (4 cups loosely packed)<br \/>\n15 ounces canned chickpeas, preferably no-salt-added, rinsed and drained<br \/>\n1\/4 cup packed cilantro leaves, chopped<br \/>\n1 teaspoon Tabasco, harissa or other hot sauce of your choice<br \/>\nKosher salt<br \/>\nFreshly ground black pepper<\/p>\n<p>FOR THE SALSA<br \/>\n1 cup pomegranate seeds<br \/>\n2 scallions, trimmed and finely chopped<br \/>\n2 tablespoons fresh lime juice<br \/>\n12 mint leaves, finely chopped<br \/>\n1 tablespoon extra-virgin olive oil<\/p>\n<p>For the stew: Pour the oil into a large saucepan over medium heat. Once the oil shimmers, stir in the coriander, cinnamon, turmeric, cardamom and cloves; sizzle them for a few seconds, then add the onion, stirring to coat. Cook until translucent, 3 to 4 minutes, then add the ginger, garlic and serrano pepper. Reduce the heat to medium-low and cook until soft, 10 minutes.<\/p>\n<p>Add the tomatoes and their juices, the carrot, squash and enough water, if needed, to barely cover the vegetables. Cook, stirring occasionally, until the vegetables are tender, 30 to 40 minutes. Stir in the spinach, chickpeas, cilantro and hot sauce; season lightly to taste with salt and black pepper. Cook for just a few minutes, to wilt the spinach and heat the chickpeas through.
