Malaysian kitchens (in\u00a0Southeast Asia, in Southern California, and elsewhere) weave Chinese, Indian and Malay culinary strands\u00a0into a complex cuisine.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div>\n<div>\n<div>2 tablespoons\u00a0coriander seeds<\/div>\n<div>1 tablespoon\u00a0black peppercorns<\/div>\n<div>1 tablespoon\u00a0cumin seeds<\/div>\n<div>1 tablespoon\u00a0fennel seeds<\/div>\n<div>4\u00a0cloves<\/div>\n<div>1\/4 teaspoon\u00a0ground tumeric<\/div>\n<div>5 to 8\u00a0dried arbol chiles, stemmed<\/div>\n<div>2\u00a0lemongrass stalks<\/div>\n<div>3 tablespoons\u00a0vegetable oil<\/div>\n<div>1 lb. seitan, cubed<\/div>\n<div>1 teaspoon\u00a0shrimp paste*<\/div>\n<div>3 large shallots, thinly sliced<\/div>\n<div>1 can (13.5 oz.)\u00a0coconut milk<\/div>\n<div>1 quart\u00a0veggie broth<\/div>\n<div>2 teaspoons\u00a0sugar<\/div>\n<div>3 teaspoons\u00a0kosher salt<\/div>\n<div>1\u00a0cinnamon stick<\/div>\n<div>8 ounces\u00a0mung beans, rinsed<\/div>\n<div>8 ounces\u00a0wide rice noodles<\/div>\n<div>1\/3 cup\u00a0fresh mint leaves, torn into smaller pieces<\/div>\n<div>1\/3 cup\u00a0fresh cilantro leaves, torn<\/div>\n<div>lime wedges<\/div>\n<div>Sambal oelek chili paste<\/div>\n<\/div>\n<\/div>\n<div>\n<div><\/div>\n<div>\n<div>\n<p><strong>For the sambal oelek chili paste:<\/strong><\/p>\n<ol>\n<li>Grind coriander, peppercorns, cumin seeds, fennel seeds, cloves, turmeric and chiles coarsely in a spice\u00a0grinder; set aside. Peel tough outer layers from lemongrass, then mash core with a meat mallet or small,\u00a0heavy frying pan.<\/li>\n<\/ol>\n<p><strong>For the laksa:<\/strong><\/p>\n<ol>\n<li>Heat oil in a large pot over medium heat. Add seitan, shrimp paste, shallots, and reserved ground\u00a0spices and cook, stirring constantly, until fragrant, 2 minutes.<\/li>\n<li>Pour in coconut milk, broth, sugar, and salt; add cinnamon stick and lemongrass. Bring to a boil, then\u00a0simmer, covered, 20 minutes.<\/li>\n<li>Boil bean sprouts in a large pot of boiling water until softened, 2 minutes. Transfer sprouts to a bowl.\u00a0Add noodles to pot and cook until firm, 4 minutes. Drain; rinse well.<\/li>\n<li>Divide sprouts and noodles among bowls. Ladle in soup (remove cinnamon and lemongrass) and top\u00a0with mint and cilantro.
