{"id":237,"date":"2009-09-14T10:49:22","date_gmt":"2009-09-14T14:49:22","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=237"},"modified":"2009-09-14T10:49:22","modified_gmt":"2009-09-14T14:49:22","slug":"oyster-soup-with-coconut-milk-and-chiles-serves-4","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2009\/09\/14\/oyster-soup-with-coconut-milk-and-chiles-serves-4\/","title":{"rendered":"Oyster Soup With Coconut Milk and Chiles &#8212; Serves 4"},"content":{"rendered":"<p>1 pint shucked oysters (about 16) including their liquor<br \/>\n1 cup bottled clam juice<br \/>\n1 1\/2 cups canned, unsweetened coconut milk<br \/>\n1 jalapeno chile, quartered lengthwise<br \/>\n3 green onions, thinly sliced<br \/>\nzest of 1\/2 lime<br \/>\n2 tablespoons lime juice<br \/>\n1\/4 cup chopped fresh basil<br \/>\n1\/4 cup chopped fresh cilantro<br \/>\n1 teaspoon salt or to taste<\/p>\n<p>Strain oysters over saucepan and reserve the oysters. Add the clam juice to the oyster liquor along with the coconut milk, jalapeno, onions and lime zest. Simmer for 5 minutes.<\/p>\n<p>Add the oysters and lime juice and simmer gently until the oysters&#8217; edges curl, about 2 minutes.
