{"id":231,"date":"2009-09-14T10:47:34","date_gmt":"2009-09-14T14:47:34","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=231"},"modified":"2013-12-22T16:03:06","modified_gmt":"2013-12-22T21:03:06","slug":"refried-bean-soup-southern-living","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2009\/09\/14\/refried-bean-soup-southern-living\/","title":{"rendered":"Refried Bean Soup &#8212;  Southern Living"},"content":{"rendered":"<p>1 small onion, chopped<br \/>\n2 cloves garlic, minced<br \/>\n1 tablespoon vegetable oil<br \/>\n1 (16 oz) can refried beans<br \/>\n1 (16 oz) can diced tomatoes, undrained<br \/>\n1 (10 oz) can diced tomatoes and green chiles, undrained (rotel)<br \/>\n1 (14 1\/2 oz) can ready-to-serve chicken broth<br \/>\n2 tablespoons chopped fresh cilantro (optional)<br \/>\n6 corn tortillas<br \/>\n8 oz shredded Monterey Jack cheese (2 cups)<br \/>\n1 (8 oz) carton sour cream<br \/>\nguacamole<\/p>\n<p>Cook onion and garlic in oil in a Dutch oven over medium-high heat, stirring constantly, until tender.<\/p>\n<p>Add beans and next 3 ingredients, stirring until smooth; bring to a boil. Reduce heat, and simmer 15 minutes. Stir in cilantro, if desired.<\/p>\n<p>Cut tortillas into thin strips; spread in a single layer on a baking sheet.<\/p>\n<p>Bake at 350 degrees for 15 minutes. Cool.<\/p>\n<p>Ladle soup into individual soup bowls; top with tortilla strips, cheese, sour cream and guacamole. Serve immediately.
