{"id":2114,"date":"2013-08-27T22:27:56","date_gmt":"2013-08-28T02:27:56","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=2114"},"modified":"2013-08-27T22:27:56","modified_gmt":"2013-08-28T02:27:56","slug":"fish-tostachos","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2013\/08\/27\/fish-tostachos\/","title":{"rendered":"Fish Tostachos"},"content":{"rendered":"<div id=\"WideColumn\">\n<h4><\/h4>\n<ul>\n<li>8 to 12 6-inch\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=0&amp;y=0&amp;t=corn&amp;lc=int_mb_1001\">corn<\/a>\u00a0tortillas, cut in thirds<\/li>\n<li>All-natural vegetable\u00a0<i>or<\/i>\u00a0olive oil cooking spray<\/li>\n<li>2 filets sustainable, firm white fish<\/li>\n<li>Old Bay seafood seasoning<\/li>\n<li>Mexican\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=27&amp;y=8&amp;t=Pesto&amp;lc=int_mb_1001\">Pesto<\/a>, shredded crispy lettuce, finely diced seeded tomatoes, for topping<\/li>\n<li>For the Mexican Pesto:<\/li>\n<li>3 jalape\u00f1o peppers\u00a0<i>or<\/i>\u00a0other medium-heat chiles<\/li>\n<li>1 cup cilantro leaves<\/li>\n<li>1 cup arugula<\/li>\n<li>2 sprigs fresh oregano\u00a0<i>or<\/i>\u00a0marjoram leaves OR 1 teaspoon dried Mexican oregano<\/li>\n<li>2 large cloves\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=0&amp;y=0&amp;t=garlic%20&amp;lc=int_mb_1001\">garlic<\/a>, grated or pasted<\/li>\n<li>1 scant tablespoon ground cumin<\/li>\n<li>Zest and\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=0&amp;y=0&amp;t=juice&amp;lc=int_mb_1001\">juice<\/a>\u00a0of 2 limes<\/li>\n<li>1\/4 cup pistachios\u00a0<i>or<\/i>\u00a0pepitas (pumpkin seeds), toasted<\/li>\n<li>Salt and pepper<\/li>\n<li>A splash of water<\/li>\n<li>3 tablespoons EVOO \u2013 Extra Virgin Olive Oil<\/li>\n<\/ul>\n<\/div>\n<div id=\"PageContent\">\n<div>\n<p>Preheat oven to 400\u00b0F. Lightly spray tortillas with cooking spray. Bake until crisp and light golden.<\/p>\n<\/div>\n<div>\n<p>Lightly spray a nonstick skillet with cooking spray and heat over medium-high heat. Cook fish 8-10 minutes until opaque. Flake into bite-size pieces.<\/p>\n<\/div>\n<div>\n<p>Dress tortillas with lettuce topped with warm fish and dot with\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=27&amp;y=8&amp;t=Pesto&amp;lc=int_mb_1001\">pesto<\/a>, top with diced tomatoes.<\/p>\n<\/div>\n<div>\n<p><b>For the Mexican Pesto:<\/b><br \/>\nIn a food processor, combine the chilies, cilantro, arugula, oregano or marjoram,\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=0&amp;y=0&amp;t=garlic%20&amp;lc=int_mb_1001\">garlic<\/a>, cumin, lime zest and<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=0&amp;y=0&amp;t=juice&amp;lc=int_mb_1001\">juice<\/a>, pistachios or pepitas, and season with salt and pepper. Pulse-chop to combine, adding a splash of water to loosen. Turn the processor on and add the EVOO in a slow stream, blending until a thick\u00a0<a href=\"http:\/\/www.rachaelrayshow.com\/food\/recipes\/search\/?x=0&amp;y=0&amp;t=sauce&amp;lc=int_mb_1001\">sauce<\/a>\u00a0forms.
