{"id":137,"date":"2009-09-09T10:52:20","date_gmt":"2009-09-09T14:52:20","guid":{"rendered":"http:\/\/mimbly.com\/wordpress\/?p=137"},"modified":"2010-03-08T11:18:57","modified_gmt":"2010-03-08T16:18:57","slug":"cat-fish-helen-krafsur","status":"publish","type":"post","link":"https:\/\/mimbly.com\/wordpress\/2009\/09\/09\/cat-fish-helen-krafsur\/","title":{"rendered":"Cat Fish &#8211; Helen Krafsur"},"content":{"rendered":"<p>1 cup pimiento-stuffed green olives, drained, and chopped<br \/>\n1 Tbsp chopped capers<br \/>\n2 tablespoons extra-virgin olive oil<br \/>\n1 teaspoon finely grated fresh lemon zest<br \/>\n3 tablespoons chopped fresh flat-leaf parsley, some hot red peppers (my addition)<br \/>\n4 (6-oz) catfish fillets<br \/>\nAccompaniment: lemon wedges<\/p>\n<p>Stir together olives, capers, oil, zest, peppers, and 2 tablespoons parsley in a bowl. Arrange catfish, skinned sides down, in an oiled 12-inch nonstick skillet, tucking thinner ends of each fillet under. Season fish with salt and pepper, then mound olive mixture on top. Put a round of parchment or wax paper on top of olive mixture, then tightly cover skillet. Cook catfish over moderate heat until just cooked through, 8 to 10 minutes.
